Upper House Dining is aiming even higher with two new stars in the kitchen

One has his roots in Göteborg and wide international experience in fine dining. The other is a member of the Swedish national team of confectioners and created Prince Carl Philip’s and Princess Sofia’s wedding cake. Now head chef Gabriel Melim Andersson and pastry chef Fredrik Borgskog are joining the restaurant team at Upper House Dining.
“These two are dream recruits who will give our guests a deeper and greater dining experience,” says Krister Dahl, executive chef at Gothia Towers.

Since its opening two years ago, Upper House Dining has won prizes, received many nominations and become a great favourite among guests with a taste for fine dining in a unique environment. Now the restaurant is aiming even higher with two new and renowned additions to the kitchen: head chef Gabriel Melim Andersson and pastry chef Fredrik Borgskog.

Gabriel Melim Andersson is 28 and grew up in Göteborg, but he left Sweden early to pursue an international career. He has worked in Paris and New York, among other places.
“Gabriel has a very exciting CV and he is thoroughly trained in French cuisine. He will help to develop the total experience that we give to our guests – they are very well looked after but also find something unexpected,” says Krister Dahl, Gothia Towers’ executive chef and the only person in the world to have won four gold medals at the Culinary Olympics, something that has set the standard for Upper House Dining from the start.
Gabriel is looking forward to returning to Göteborg and becoming part of the exciting restaurant culture that he sees growing strongly in the city.
“Upper House Dining is a beautiful restaurant with a highly skilled staff and guests who I know expect the highest overall standards. I hope to be able to provide a little edge and do what I enjoy most of all: reflecting the moods of the seasons and the days in a living menu,” says Gabriel.

Fredrik Borgskog is 32 and worked with Krister Dahl 13 years ago as an apprentice chef. Since then he has competed with the Swedish national teams of both chefs and confectioners and most recently attracted much acclaim for the wedding cake that he helped to create for the wedding of Prince Carl Philip and Princess Sofia.
“Fredrik has amazing creativity and skilled hands, which I am certain will take Upper House to new heights,” says Krister Dahl.
“It will be an exciting challenge to work in fine dining again. Upper House Dining has drive and passion and it will be great to be a part of it. And it will be fun to work further on the clear and exclusive simplicity that Upper House stands for,” says Fredrik.

Gabriel and Fredrik will join Upper House Dining during November.
“Working here is not just about maintaining standards but also continuously driving development forward. Our ambition is to stand out at a very high level and make ourselves interesting for the Guide Michelin and thus attract international guests to Göteborg,” says Krister Dahl.
